Carte Postale sits on the hill of the Venizelos graves, where the road runs out and Chania falls away below.

The terrace catches every shift of the light: white midday glare, the long honeyed afternoon, the lantern hour when the harbor turns to a glittering line.

We built the room around the view.

Whipped fetas under crisp toppings. Beetroot dumplings in herb oil and yogurt. Slow-cooked beef pressed into a sandwich with provolone. Quinoa tossed Caesar-style with our own dressing.

The flavors are familiar; the gestures are new. The fire is real.
